As American as fried chicken
An honest-to-god fried chicken that is crunchy on the outside and juicy inside is unbeatable. And while the Americans have some of the worst food habits and can hardly be credited with coming up with some good food, the fried chicken is an exception.
While traditionally the American fried chicken is served with cole slaw, we have tried to be a bit healthier and use a fresh tomato and coriander salad.
The Perfect American Fried Chicken
While not going into the super secret recipe of KFC chicken, one can safely say that most fried chicken can be as super if the coating is right.
Ingredients
350 ml buttermilk
1.25 kg chicken, cut into 8 pieces
125 gm plain flour
1 ½ tsp salt
1 tsp chilli powder
1 tsp garlic paste
Large pinch of grated nutmeg
Oil for deep-frying
Parsley sprigs to garnish
Method
Soak the chicken in the buttermilk and marinate in the fridge for a couple of hours. Turn occasionally so that all the pieces are coated properly.
In a large bowl, mix the flour with the salt, chilli powder, garlic and nutmeg. Lift each chicken piece from the buttermilk and shake off any excess liquid. Coat with the seasoned flour.
Heat the oil for deep-frying to about 180°C and fry the chicken, turning them several times, in batches till cooked through and golden brown all over. This should take about 10-15 minutes for each batch. Serve immediately garnished with the parsley sprigs.
