Cheers to Oktoberfest!

As autumn rolls in, it’s time for a special cheer, especially for beer guzzlers. Many city restaurants are celebrating the German festival dedicated to beer. Called Oktoberfest, the festival is huge in Germany where it is celebrated as a carnival with beer as the star of the show.

“In Germany, beer is served in one litre glasses and guests consume no less than 10-12 each of those throughout the day,” informs Willi Haueter, executive chef at The Imperial.
Similarly, many city restaurants are hosting Oktoberfest. Just like the German festival, they have introduced many German delicacies in their menu and are taking special care of variety of beer served. Jatin, executive chef, Amour – The patio restaurant, cafe & bar, informs they are serving delicacies that go best with beer and are prepared exactly the same way as in Germany.
“We have devised a new menu which represents the dishes being served during Oktoberfest in Germany. Our special selections for this Oktoberfest period are varieties of German sausages, i.e., bratwurst, bockwurst, krakuer and frankfurter. Also, we are doing veal schnitzel, herb-crusted chicken with roast apple and mushroom sauce, speatzle, apple strudel and much more,” says Jatin.
Chef Willi, who has decided the menu for 1911 Bar at The Imperial, says the festival has many fans in Delhi. “Oktoberfest is mostly celebrated by beer fans and usually attracts males between 30 and 45 years of age. It is definitely gaining popularity each year,” says Willi, who has created a menu predominately based on sausages for the fest. “Pork products are the prime delicacies that go with beer. There will be a variety of sausages and freshly baked pretzels with different mustard (mild, spicy, brown and sweet) available during the festival.”
The Imperial, which will be hosting the Oktoberfest beginning next month, is going to serve delicacies like bockwurst with fresh warm pretzel, mustard and horserad-ish; nurnberger wurst and thurin-ger bratwurst, again served with freshly made pretzel.
Blanco too has come up with a special menu comprising of cabbage rolls, latkes and sausage platter served with Indian beers. The Grand will be serving beer with fare such as würstl, frikadellen, schlachtplatte and more.
So, if you love your beer and wish to bid goodbye to summer the way it is done in Germany, be a part of the ongoing Oktoberfest at city joints.

HERB CRUSTED CHICKEN
Ingredients:
160 grams chicken thigh
1 egg yolk
5 gm Amul cheese
5gm hung curd
5gm garlic
2 ml malt vinegar
10gm bread crumb
1gm dry thyme
1gm dry basil
1gm dry oregano
Salt to taste
Pepper to taste

For Apple Sauce
20gm Green Apple
5gm butter
2ml brandy
5gm mushroom
3gm cream

Method:
Marinate the chicken with egg yolk, cheese, hung curd, garlic, malt vinegar.
Prepare crumbs with dry thyme, basil, oregano, salt and pepper.
Grill the chicken and cover with crumbs, then cook in salamander.
Roast the apple, deskin and cut into dices. Toss with butter and add brandy, finish with cream.
Boil potato, mash the same and cook with garlic. Season the mashed potato, fold with egg white and bake it.
