Get ready for the party

While throwing a party, it is absolutely imperative that you have the finger food or snacks, down pat. What with all the dancing and drinking, guests usually do not go in for a proper meal, the snacks keep them going. So if you have the finger food covered, your party is already 90 per cent successful.

Blue cheese and bacon stuffed mushrooms
You can substitute bacon with salami (pork or chicken) and the blue cheese with a smoky gouda, but if possible stick to the original ingredients.

Ingredients
3 rashers of bacon
6 large mushrooms
1 tbsp butter
1/2 onion, diced
1 clove garlic, sliced
90 gm cream cheese
90 gm blue cheese
1/3 cup bread crumbs

Method
Preheat oven to 175°C. Cook bacon rashers on a heavy bottomed pan till crispy. Remove the stems from mushrooms and chop them finely, leaving the caps intact.
Add butter to the leftover bacon grease and cook the diced mushroom stems, onion, and garlic over medium heat till the onions caramelise.
In a blender, add the onion and mushrooms along with the bacon, cream cheese, blue cheese, and bread crumbs and blend till the ingredients are evenly combined. Stuff the cheese mixture into the mushroom caps and place into a pre-oiled baking dish.
Bake for 10-15 minutes and serve hot.

Silken Guacamole Dip
This is one dip you will never go wrong with. The silken texture of the dip comes from tofu. This dip is also a great source of protein and ideal for those who are going a bit heavy on the booze.

Ingredients
2 ripe avocados, halved and pitted
250 gm silken tofu
2 tbsp lime juice and a bit of lime zest
1/2 tsp salt
1 large clove of garlic, pressed 1 tbsp chopped coriander

Method
With a fork mash together all the ingredients except the coriander till it’s smooth and creamy, you can also get your hands dirty and knead it like a dough. If you want the guacamole really smooth, blend it for while in the food processor. Stir in the coriander and check seasoning. Serve with nachos or crisps.
