Holiday roasts
If we survive Friday, 21-12-2012, we should definitely celebrate Christmas in a big way. While we leave the gift buying to you and your wallet, we have some suggestions about the food and no, it does not involve turkey.
Holiday Rib Roast
A rib roast is easy in a fill-it-shut-it-forget-it kind of way and will leave you with enough time to enjoy the festivities.
You will have to, however, ask your butcher to trim and cut a rib roast. The fresher the meat, the better your roast will be.
Ingredients
1 ½ kg mutton ribs, with the bones trimmed
1 tbsp of roast seasoning
Seasoning:
1 cup salt
1/4 cup black pepper
1/4 cup garlic powder
2 tbsp cayenne pepper
Mix together and store in an airtight container.
Method
Preheat oven to 180°C. Ensure that the ribs are in room temperature, so take them out of the refrigerator well in advance.
Rub the ribs all over with the seasoning and stand for 15-20 minutes.
On a roasting pan, roast the ribs, bone side down, for one hour. Turn off the oven but do not remove the roast for two hours.
Around 40 minutes before serving, turn on the oven to 180°C and re heat the roast. It is important that the roast is not taken out or the oven door opened in between.
Serve with jacket potatoes, salad and wild rice.
