Make way for brookies

They are brownies, yet they are not. They are cookies, yet they are not. They are brookies, a delicious combination of brownies and cookies. Once you have bitten into one of these heavenly delights with the taste of a chocolate chip cookie and texture of a moist brownie, you will realise that all those brownies and fudges you have had before this were mere stand-ins.

The concept of a brookie, however, is not new. It has been around under the guise of a ‘congo bar’. But who would want to eat a congo bar when you can have a brookie?

Chocolate Chip Brookies
For the brownies:
1 cup butter
2 1/4 cup sugar
4 large eggs
1 1/4 cups cocoa powder
1 tsp salt
1 tsp baking powder
1 tsp coffee powder
1 tbsp vanilla extract
1 1/2 cups flour
2 cups chocolate chips

For the cookies:
2 1/4 cups flour
1 tsp baking soda
1 tsp salt
1 cup butter, softened
3/4 cup granulated sugar
3/4 cup brown sugar
1 tsp vanilla extract
2 eggs
2 cups chocolate chip cookies

Method
For the brownies:
Pre-heat the oven to 180°C and butter a baking dish.
Melt the butter in a small saucepan and stir in the sugar and cook for one to two
minutes, stirring constantly. Do not let the mixture to boil.
Pour the butter mixture into a big bowl and add the cocoa powder, eggs, salt, baking powder, coffee powder and vanilla extract. Mix until well combined.
Stir in the flour and chocolate chips until well combined. Set aside.

For the cookies:
In a bowl, mix the flour, baking soda and salt and set aside. Beat together the butter, brown sugar, sugar, and vanilla until creamy. Add eggs, one at a time, mixing after adding each one. Sift in the flour mixture and the chocolate chips.
Pour the brownie batter in the prepared baking dish first and drop small spoons of the cookie dough on top of the brownie batter.
Bake for about 30 minutes or until a toothpick inserted into the brownie comes out clean.
