Wowing over the waffle
The simplest recipes are often the best. The waffle, for example, has seen many avatars over the years. Cafes have served gingerbread waffles with pomegranate molasses and roadside eateries have hawked bacon-topped waffles.
And while all of these have had their moment in the sun, the classic waffle with a butter and honey or maple syrup or a cream and strawberry topping will beat these posers hands down every time.
There’s only one hurdle; you need a waffle iron. Thankfully these days waffle irons are available at all kitchen supply stores.
The Classic Waffle
Ingredients
1 1/3 cups flour
2 tsp baking powder
1/2 teaspoon salt
2 tsp sugar
2 eggs, separated
1/2 cup butter, melted
1 3/4 cups milk
Method
Heat the waffle iron.
Whisk together all dry ingredients in a large mixing bowl.
Separate the eggs, beat the yolks briefly and add to the dry ingredient mixture and mix.
Beat the whites until moderately stiff and set aside.
Add the milk and melted butter to the dry ingredient mixture and blend. Now fold egg whites one ladle at a time into the mixture.
Ladle the mixture onto the hot waffle iron and bake the waffle is golden.
Serve immediately topped with whipped cream and strawberries or butter and honey or maple syrup.
Note: If you do not have a waffle iron, make pancakes out of the batter, it will taste as good, though not so crispy.
