Cooling soups and salads for lunch
While it’s started to rain, the days can get really humid at times. Pakodas and chai might make great evening snacks while it’s pouring outside, but one needs something cooling and healthy like cold soups and salads for lunch.
Vietnamese Shrimp and Glass Noodle Salad
This salad is fresh and has got just the right amount of bite that the Indian palate will love.
Ingredients
For the dressing:
2 cloves garlic, minced
2 fresh red chillies, seeded and finely chopped
1 1/2 tbsp ginger paste
4 tbsp fish sauce
Juice of 1 lime
4 tbsp water
1 tbsp sugar
2 tbsp groundnut oil
1 tsp sesame oil
For the salad:
250 gm small prawns (boiled for a couple of minutes in salt water)
200 gm glass noodles
120 gm sugar snap peas
120 gm bean sprouts
2 onions, sliced into thin circles
1/2 cup finely chopped fresh coriander leaves
Method
First make the dressing. Mix all the ingredients in a plastic container, cover the lid and give it a good shake. Refrigerate till ready to use.
For the salad: Marinate the prawns in 1/2 cup of the Vietnamese dressing. Meanwhile prepare the noodles. Once re-hydrated, run the noodles under cold water and drain. Put the sugar snaps and bean sprouts into a colander and pour over freshly boiled water from a kettle. Again rinse with cold water and drain well. In a large bowl, mix the marinated shrimp with the drained noodles, onions, sugar snaps, and bean sprouts. Dress with 2 tablespoons of the Vietnamese dressing; taste and add more if needed. Sprinkle the chopped coriander give it a good toss before serving.
